I think the most of you know the existence of banana pancakes and probably you all know a bit how to make them. But that doesn’t stop me to share my recipe of making my favorite sunday breakfast – which I’m eating right now.
When you follow me on instagram – @justlikesushi – you know I like to make my breakfast on Sundays a bit more special than during the other days. I’ve been making these pancakes for while now and through the months I’ve finally got my hands on the best recipe (for me). And to be honest, this breakfast idea is so easy you almost can call it a recipe.
What do you need?
1 egg
2 bananas
a bit of soya milk
a bit of flour
a pinch of cinnamon
coconut flakes
a couple of strawberries (or other of your favorite food)
How to make them
It’s best to use bananas that are a bit older because that will give more of a sweet taste to the bananas. Peel them and mash them to a soft mixture. Now it’s time to add an egg with a bit of soya milk, a bit of flour and pinch of cinnamon. Whip all the ingredients together and this will be your pancakes we’re gonna bake.
I always use a regular baking pan with a bit of olive oil. Be sure the pan is hot enough and pour a bit of the mix in the pan with a spoon. If you want you can bake 2 or 3 small pancakes at the same time. In comparison with regular pancakes these banana ones need more time to bake. When you see some bubbles coming up in the pancakes it’s almost time to flip it. With a bit of patience and eye on the pan this yummy can’t go wrong. Add some strawberries and coconut flakes to complete it. Bon appetit!
